A close-up on cured meats

Everybody is agreed on one thing: two or three slices of salami or a succulent serving of ham are a great joy to the palate. However, not everyone knows that these delicacies are also very valid foodstuffs from many aspects: healthy, nourishing and digestible. There are still many prejudices about cured meats, and these are connected both with the idea of the pig as "fat" and with the preparation of the derived products, whether sausages, salamis or hams, which is not always perfect in terms of ingredients and processing. These are prejudices which now have to be unmasked. Effectively, the most qualified foodstuff companies in the sector assure excellent raw materials that are healthy and controlled by continual veterinary examinations. The pigs are reared with care, and fed on healthy foods to produce prized meat that is lean and rich in protein and other precious nutritional elements



Deli meats have
high protein content, actually higher than that of other meats, percentage of lipids and calorie content highly advantageous in comparison to other foods. For a snack or a quick lunch, a roll with ham or salami is the perfect answer. It is nourishing and, above all, much more satisfying than other snacks, without being any more fattening. Cured meats all contain vitamin B1 which helps to transform what we eat into energy. As well as this, pork contains five times as much selenium as other meats (selenium being a mineral salt with a powerful antioxidant capacity). A portion of cured meats may be highly versatile: it can be an excellent alternative to meat when we don't have the time, the opportunity or the desire to prepare it, or a tasty main course, accompanied by salad or cooked vegetables.



In short, cured meats are a perfect food for all ages and for all nutritional requirements. Beyond this, in terms of flavour and the art with which they're produced, they are a
benchmark of our gastronomic traditions, albeit continually adapting to the demands of a modern nutritional lifestyle.
