Balsamic Vinegar of Modena can be found in many retail outlets in a variety of elegant bottles with stylish labels and is sold at differing prices, which makes it very confusing for the consumer to determine which is the most suitable one for them to buy. Fiorucci has collaborated with the Association of Italian Balsamic Tasters (AIB) to establish a quality certification system to bring clarity to the world of balsamic vinegar. The system not only links the production and quality of the product to its chemical-physical features, but considers a sensorial analysis as well. For a product that is traditionally very confusing to the consumer and professional alike, Fiorucci believes that this is a significant step in helping the public to understand what they are buying and the best way to use it.
The grading system employs the use of banners inside which is a chef’s hat and vine leaves, the number of vine leaves corresponding to the type and price of balsamic vinegar. They range from those having the banner with one leaf that are recommended for salad dressings and everyday use up to the ones bearing four vine leaves representing the most expensive examples which are recommend for “exclusive recipes” as well as for use on fruit, ice cream and shaved Parmiggiano-Reggiano and should be used by the drop, or simply to sip as the Italians do as a digestive. In between, there are those with two leaves and those showing three leaves that are suggested for marinades, barbeque and over warm vegetables, roasted meats and fish or for warm sauces. This is a great benefit to retailers as well as providing consumers with advice and serving suggestions for the different types of balsamic vinegar it serves to remind that they are just that, different, as opposed to being different levels of quality.
